Mex Chicken and Rice Bake

Mix 1 can of condensed Cream of Chicken soup, 1 soup can of milk, 3/4 cup uncooked regular long grain white rice, and 1-1/2 tsp chili powder in a shallow baking dish. Spread evenly with a 1-1/2 cup mixture of red and green pepper strips, 1/2 cup of frozen corn and chopped onion. Top with 4 boneless, skinless chicken breasts. Sprinkle with 1/2 cup of Tex Mex shredded cheese and cover. Bake at 400 degrees Fahrenheit for about 45 minutes. Broil for about 3 minutes. Removechicken and stir rice before  

  

Fancy Pants

You'll need 2 pounds of ground beef, 1 pound of sharp cheddar cheese, garlic powder, and 2 (15 oz) cans of tomato sauce. Salt and pepper. Form eight equal patties from the meat. Cut the cheese into slices, place a slice of cheese on half the patties and place remaining patties on top of cheese. Pinch the edges so cheese doesn't leak out. Sprinkle the bottom of the pot with granulated garlic, brown patties on each side and cover with tomato sauce. Cook until done over medium heat for about 30 minutes. Serve with your favorite potato or rice.

  

Oven Glazed Vegetables 

You'll need, 6 cups of vegetables, like parsnips, turnip, baby carrots or slim carrots; 3 sweet peppers, preferably a mix of red, green and yellow; 3 tbsp each of vegetable or olive oil, teriyaki sauce, balsamic vinegar and brown sugar; and 1/2 tsp salt. Preheat oven to 325F. Grease a large rimmed baking sheet. Cut up your vegetables and put them in a large bowl. In a small bowl, whisk your olive oil, teriyaki sauce, balsamic vinegar and brown sugar -- remember 3 Tbsp of each. Drizzle over vegetables and toss until evenly coated. Then remove peppers and place in another dish. Turn remaining vegetables onto baking sheet and spread out. Roast in 325F oven for 30 minutes. Stir in peppers and continue roasting until carrots are fork-tender, another 30 minutes.   

  

German Pancakes 

You'll need 1-1/2 cups flour, 1/2 tsp salt, 3 eggs and 1-3/4 cups milk. Make a well in the flour and add salt, unbeaten eggs and 1 cup milk. Beat until free of lumps. Add the rest of the milk and continue beating to make a very thin batter. Now, remember these are supposed to be really thin...you need a good pan for this... drop about 1/4 cup of the mixture on the hot pan... tilt the pan in all directions till it's round... andfry it up! 

  

Raisin Pie 

 1 3/4 cups sultana raisins
 2 cup water
 1 1/2 cups sugar
 1/4 cup flour
 1 egg well beaten
 3 tbsp. lemon juice
 3 tbsp grated lemon rind
 1/4 tsp salt and cook until thickened.  Pour into pie shell and cover with pastry.   @ 450F  for ten minutes, reduce heat to 350 and continue baking 20-30 minutes.

  

Canadian Hot Dog Topper
 
Mix equal amounts of mayonnaise and mustard. Drizze with maple syrup. Add some grated Old Cheddar.   on your hot dog. Top with a few pieces of crispy fried bacon... and you're done! 
Glaze for Pork
 
1/4 cup brown sugar
1/4 can of concentrated frozen orange juice
1 can of cranberries

Mix together. Bring to a boil in a saucepan... stirring constantly or often. Then, brush on pork, on either barbecue or oven... brush on the pork every few minutes as you grill.

  

Strawberry Cake  
10 inch angel food cake
1/2 pt whipping cream
10 oz frozen strawberries (or fresh)
3 oz strawberry Jello
1-1/2 cups boiling water

Rip angel food cake into bite-size pieces and place into 9x9 inch pan. (9x13 works better according to my guest.) Dissolve Jello in water and stir in the strawberries. Let thicken to thickness of egg white. Beat whipping cream and fold into thickened strawberry mixture. Pour over cake and refrigerate till set... 3-4 hours. 

  

Bacon Flavored Dog Biscuit Treats  

2 -1/2 cups whole wheat flour 
1/2 cup milk   eggs   tablespoons vegetable oil or bacon fat 
1 pinch onion or garlic powder 
1/2 teaspoon salt 
1/4 cup cold water 

Preheat your oven to 350 degrees. Grease cookie sheets. Mix all ingredients well. Pinch off pieces of the dough and roll them into two-inch balls. Bake biscuits at 350 degrees for 35 to 40 minutes. Let them cool, then store in an airtight container.
